This philosophy allows guests to participate in our environmental projects and to vacation without feeling guilty .
The cuisine at The Resurgence reflects the increasing awareness of farm to table dining. Our area boasts a Mediterranean climate with olives, pip and berry fruit and one of New Zealand's biggest sustainable fisheries. We plan menus to match what is seasonal, we use produce from our local area and we showcase the best Nelson wines and artisan producers. Any left-overs are put to creative uses and all food scraps go into our dual compost system which then goes into the kitchen garden.
Use of local building materials helps our buildings blend into their landscape. Interiors exhibit the famed Nelson artists and the colours and timbers of the region. We invested a bit more to create sustainable buildings, built to last, and with good maintenance our assets will endure longer and be cheaper to run.
The 50-acres of grounds preserve some rare lowland forest, most of which was cleared by Maori and early European Settlers. We plant a tree for each guest who stays and are carbon neutral. Our native bush reserve protects and conserves flora and fauna and also provides a native corridor for birds as they travel between the 2 national parks we sit between. Our predator control program protects birds within our property and numbers and species have increased markedly since we started 10 years ago. Owners Peter and Clare are also active in local conservation through Chairmanship of one of the country's largest community conservation initiatives, Friends of Flors, which aims to restore the biodiversity of a large area of the adjacent Kahurangi National Park.
By embracing the Maori concept of kaitianga, environmental stewardship, we aim to inspire people to become more involved in protecting their own environments, and to pick up some ideas on how they can live a greener lifestyle without sacrificing all comforts and luxuries. We hope that our work will leave a legacy to the property that we have been privileged to own and share with our guests.
